This delicious Massaman curry was my first ever slow cookermeal. It was given to me by a lovely friend who assured me all you had to do was throw everything together before work and by the time you get home you have very yummy dinner cooked for you. Well after this little number I was hooked. It was definitely easy! Another trick I have learnt is put everything in the crock pot of the slow cooker the night before and cover with cling wrap and place in the fridge. This way all you have to do in the morning is put it straight in the slow cooker. I found this helpful because I then didn't have to deal with raw meat first thing in the morning. Just a note - the yellow tin of Massaman paste is from Woolworths. So for all those first time slow cookers out there this is a winner!! Thanks Tamara xx
Ingredients:
- 500gm chuck or gravy beef diced chunky
- 1 tin of Massaman curry paste
- l large onion sliced
- 2 cubes of palm sugar
- 3 potatoes large cubes
- 1 tin coconut milk
- handful of unsalted peanuts
Put all ingredients in the slow cooker, mix together and cook on low all day or high for half a day. Yum, yum, yum.
